The complexity of Bila-Haut reflects the diverse terroirs and wind of the Midi. By meticulously hand-harvesting the best grapes from the best vineyards of the Roussillon, a well-known Rhone producer has transformed his magic to the Languedoc and created a wine with finesse. This wine is fleshy, well-structured with aromas of black cherry and the warm and savage soils of the Roussillon area.

GRAPE VARIETIES
Grenache blanc, Roussanne, Marsanne
and Macabeu.

TERROIR
A part of the grapes comes from limestone,
clay soils and gneiss in the Agly Valley;
the other part from granite soils at higher
altitude (500m, later ripening sites).

HARVEST
The grapes are manually harvested early
in the morning and hand selected to protect
the aromas.

VINIFICATION
After pressing, the must is cold-settled.
Vinification is performed in temperature
controlled stainless steel tanks.

MATURING
Ageing lasts a few months in order to keep all the freshness and enhance the minerality.
TASTING
Colour: pale yellow colour with green tints.
Nose: the wine exhibits floral and citrus aromas
(lemon, grapefruit) with smoky notes.

Palate: fresh and very aromatic attack.
The palate is round, with a great acidity
(coming from the later ripening sites at higher
altitude). A lot of freshness on the finish mixed
with salty notes, which express the minerality
of the wine.

Recommended food pairing:
stuffed squids.
Serving temperature: 10-12°C.
Ageing potential: 2 to 3 years.
